How do at home and freeze pierogi

As a long mother and wife, do not always have time to cook dinner one hour in the afternoon. To resolve this problem, I want to make our own freezer meals that can defrost, heat or cooking … and have at our table in less than 30 minutes.

My family has a house in the potato and cheese pierogi I like to spend an evening every month, and they freeze for future use. The following recipe is I want to use.

Potato and cheese pierogi

Trim:

2 lbs. Velveeta cheese
8 oz sharp grated cheese
5 lbs. white potatoes, peeled and cooked
4 small onions, chopped
salt and pepper to taste
1 clove garlic, minced

Fry the onions finely chopped 1 stick of butter and reserve. In a large stock pot, boil 5 lbs. potatoes, drain the water, Mix the potatoes and side. In a large bowl, combine potatoes, Sharp and Velveeta cheese, chopped onion, salt, pepper and garlic.

Mass:

4 cups all purpose flour
1 cup shortening
1 teaspoon salt
2 eggs mixed with 1 / 4 cup water

You make several batches of dough, but only 1 batch at a time. Usually end up doing lots 3-4.

In a large bowl, mix flour, shortening, salt, eggs and water until mixture forms a stiff dough. Roll the dough into a dough flour board. 4.5 Use a circle cutter or empty coffee can reduce the circles of dough. Place 2 tablespoons of potato filling at the center of each circle of dough. Fold the circle in half and lightly wet the edges of the water about a pinch.

Once cold, place on a cookie sheet and freeze for 1 hour. Remove from freezer and place in plastic freezer containers, boxes or bags. It will keep for 9-12 months in the freezer.

You'll need to thaw for 20 minutes at room temperature before fry in a skillet or deep fryer. This recipe will make 12-13 dozen pierogi.
